- 2 medium sweet potatoes, cubed
- 1 tbsp olive oil
- 1/2 tsp salt
- 1/2 tsp chili powder
- 1 can (15 oz) black beans, rinsed
- 1/2 tsp ground cumin
- 3 cups cooked rice
- 2 cups chopped romaine or spinach
- 1/2 cup plain yogurt
- 1 lime, juiced
How to make it
- Heat the oven to 425°F (220°C). Toss the sweet potatoes with oil, salt, and chili powder.
- Roast on a sheet pan for 25 to 30 minutes, stirring once, until tender and browned.
- Warm the beans with the cumin and a pinch of salt in a small saucepan.
- Stir the lime juice into the yogurt.
- Build bowls with rice, greens, sweet potatoes, and beans. Spoon the yogurt sauce over the top.
Cut the sweet potatoes smaller than 1 inch so they roast in the same window as the rice.
Substitutions
- Quinoa can replace the rice.
- Sour cream can replace the yogurt.
- A drained can of corn can be warmed with the beans.
Storage
Refrigerate the components for up to 4 days. Keep the yogurt sauce separate. Reheat the sweet potatoes and beans, then add cold greens and sauce.
